TEQUILA WATERMELON COOLERS

When the summer season’s watermelon is prime and sweet, make these easy coolers for a refreshing toast!

Ingredients

  • 1 cup water
  • 1 cup granulated sugar
  • 8 cups diced seedless watermelon (1 pound)
  • 1/4 cup fresh lime juice
  • 1/2 cup fresh mint leaves
  • 1 1/4 cups silver tequila
  • Ice
  • Club Soda
  • Lime wedges or wheels

Instructions

  1. In a small saucepan, bring the water to a simmer with the sugar and stir over moderate heat until the sugar is dissolved about 1 minute. Allow the simple syrup to cool completely, then pour it into a plastic bottle until ready to use.
  2. Using your blender, puree the watermelon until smooth. Strain the watermelon juice, pressing gently on the solids to extract as much juice as possible. Discard the pulp.
  3. In a large pitcher, combine 1/3 cup of the sugar syrup with the lime juice and mint leaves. Using a muddler or the back of a wooden spoon, lightly muddle the mint. Add the watermelon juice and tequila. Taste and adjust the sweetness, adding more simple syrup if necessary. Refrigerate until well chilled.
  4. To serve, pour the mixture into ice-filled glasses. Top each glass with a splash of club soda and garnish with lime.
