SUMMER DESSERT SOUP

This sweet and succulent fresh fruit puree is a refreshing first course, a palate cleanser, or for dessert with a scoop of Pineapple Sherbet.

Ingredients

  • 2 medium Hawaiian papayas or 1 Mexican papaya, peeled and cut into chunks
  • 1 large mango, peeled and cut into chunks
  • 4 cups pineapple juice
  • 1/4 cup freshly squeezed lime juice
  • Pinch of salt
FOR GARNISH:
  • 6 strawberries, diced
  • 1/2 mango, diced
  • 1/4 cup fresh mint, cut into thin strips

Instructions

  1. Place the papaya, mango, pineapple juice, lime juice, and salt in your food processor or blender. Puree until silky smooth. Chill thoroughly.
  2. To Serve: Pour the chilled soup into chilled soup bowls. Garnish each bowl with diced strawberries, diced mango, and mint.
  3. Chef's Note: Try sprucing up your Fruit Soup by mixing a tablespoon or two of Tequila or Vodka into each bowl of soup.
