SPICY BLACK BEAN SOUP

Ingredients

  • 2 tablespoons olive oil
  • 1 yellow onion, diced
  • 3 garlic cloves, chopped
  • 1 tablespoon fresh thyme, chopped
  • 1 teaspoon ground cumin
  • 1/2 teaspoon dried oregano
  • 4 15-ounce cans of black beans, drained
  • 6 cups chicken broth
  • 1 14-ounce can of diced tomatoes in juice
  • 1-2 teaspoons ground cumin
  • 1 teaspoon hot sauce, optional
  • 1-2 teaspoons lime juice
  • 2 tablespoons unsalted butter, chilled

Instructions

  1. Heat the oil in a large pot over medium heat. Add the onion and garlic and sauté until tender and caramelized, about 10 minutes. Add the thyme, cumin and oregano and sauté 1 minute.
  2. Add the beans, broth, tomatoes with juice, cumin and hot sauce. Bring soup to then reduce the heat to medium-low and simmer until flavors blend and soup thickens slightly, stirring occasionally, about 20 minutes. Remove the soup from the heat and stir in the lime juice and cold butter.
  3. Working in batches, purée two-thirds of the soup in a blender, until smooth. Add the pureed soup back to the pot and stir to combine.
