GRILLED QUAIL WITH SPICY PLUM GLAZE

This is the perfect glaze for quail, chicken and even pork (it even makes the perfect dipping sauce for Asian appetizers!).

Ingredients

  • 6 quail (semi-boneless)
SPICY PLUM GLAZE:
  • 2 tablespoons olive oil
  • 1/4 cup red onion, minced
  • 3 garlic cloves, minced
  • 1 teaspoon adobo sauce, from a can of Chipotles in Adobo
  • 1 pounds= purple plums, pitted and diced
  • 1/2 cup honey
  • 1/4 cup soy sauce
  • Juice of 2 oranges

Instructions

  1. Heat the oil in a saucepot. Add the red onion and garlic and sauté until tender. Add the adobo sauce, plums, honey, soy sauce and orange juice.
  2. Cook over medium heat for 30 minutes, uncovered, stirring often. Remove the sauce from the heat and allow it to cool to room temperature. Refrigerate the sauce until ready to use.
  3. To Grill the Quail: Preheat the BBQ or stovetop grill to medium heat. Drizzle a bit of olive oil over the quail and season them generously with salt and pepper. Place the quail breast-side down and cook until the skin starts to bubble and brown. Baste the underside of the quail liberally with the Plum Glaze, then turn the quail over and baste the top side with the glaze.
  4. Continue to turn and baste the quail every couple of minutes or so until the birds are firm and have a nice glaze on them, about 10 minutes, depending on your grill.
  5. Serve them hot off the grill with extra sauce for dipping.
