BROWN SUGAR CARAMELS

I love chewy caramels and this homemade version is the best ever!

Ingredients

  • 1 cup granulated sugar
  • 1/2 cup firmly packed brown sugar
  • 4 ounces unsalted butter, at room temperature
  • 1/2 cup whole milk
  • 1/2 cup whipping cream
  • 1/2 cup light corn syrup
  • 1 teaspoon pure vanilla extract

Instructions

  1. In a heavy saucepan, combine all of the ingredients except the vanilla. Cook over low heat until the sugar is dissolved, about 20 minutes.
  2. Increase the heat to medium and continue cooking until a candy thermometer reaches 248°F…but Do Not Stir! Swirl the pan every so often, until you reach the desired temperature. Remove the pot from the heat and stir in the vanilla.
  3. Butter a 13x9-inch pan and pour the caramel into the pan. Top with a sprinkling of sea salt, if desired. Cool completely, then cut into 1-inch squares and wrap individually with wax paper.
