For the HALIBUT
- 6 2-ounce fresh Halibut strips
- 1 lime, cut into wedges
- For the BATTER
- 2 1/2 ounces rice flour
- 2 1/2 ounces all purpose flour
- 1 tablespoon sugar
- 1 1/2 teaspoons salt
- 2 1/2 teaspoons baking powder
- 1 pinch white pepper
- 1 cup Karl Strauss Woodie Gold Beer
Mix all ingredients, then slowly add the beer to form a batter.
For the SPICY REMOULADE SAUCE
- 2 cups mayonnaise
- 2 tablespoons Chipotle BBQ Sauce
- 2 tablespoons coarsely ground mustard
- 1 tablespoon lemon juice
- 2 teaspoons ketchup
- 1 1/2 teaspoons freshly grated horseradish
- 1 1/2 teaspoons Worcestershire sauce
- 1 tablespoon garlic, chopped fine
- Sea salt & white pepper, to taste
In a bowl, mix all ingredients well and set aside.
To Make the Dish: Dip the Halibut into the batter covering all of the fish. Fry in hot oil until done. Serve immediately with spicy remoulade sauce and lime wedges.
