For the HALIBUT

  • 6 2-ounce fresh Halibut strips
  • 1 lime, cut into wedges
  • For the BATTER
  • 2 1/2 ounces rice flour
  • 2 1/2 ounces all purpose flour
  • 1 tablespoon sugar
  • 1 1/2 teaspoons salt
  • 2 1/2 teaspoons baking powder
  • 1 pinch white pepper
  • 1 cup Karl Strauss Woodie Gold Beer

Mix all ingredients, then slowly add the beer to form a batter.

 

For the SPICY REMOULADE SAUCE

  • 2 cups mayonnaise                                          
  • 2 tablespoons Chipotle BBQ Sauce                                    
  • 2 tablespoons coarsely ground mustard
  • 1 tablespoon lemon juice         
  • 2 teaspoons ketchup                                                    
  • 1 1/2 teaspoons freshly grated horseradish
  • 1 1/2 teaspoons Worcestershire sauce                              
  • 1 tablespoon garlic, chopped fine
  • Sea salt & white pepper, to taste

In a bowl, mix all ingredients well and set aside.

 

To Make the Dish:  Dip the Halibut into the batter covering all of the fish.  Fry in hot oil until done.  Serve immediately with spicy remoulade sauce and lime wedges.
