Brown sugar adds great flavor to these old favorites. Let your Tea Party guests participate in making the cookies by dividing the batter into bowls, one for each child. Put out a tray of delicious goodies, such as raisins, dried cranberries, chopped nuts or chocolate chips. Let the kids add as many or as few additions as they like to make there own custom cookies batches!
- 1 1/2 cup quick-cooking oats (not instant)
- 3/4 cup all-purpose flour
- 1/2 teaspoon baking soda
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 1 stick (1/2 cup) unsalted butter, at room temperature
- 1/2 cup packed brown sugar
- 1/2 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- Raisins, dried cranberries, nuts or chocolate chips, about 1 cup total for a full batch of batter
Preheat the oven to 350°F.
Combine the oats, flour, baking soda, cinnamon and salt in a mixing bowl.
Using an electric mixer, cream together the butter, brown sugar and granulated sugar until smooth. Add the egg and vanilla and blend well. Mix in the dry ingredients. Stir in the desired add-ins.
Lightly grease 2 cookie sheets. Drop the batter by rounded teaspoonfuls onto the cookie sheets, about 2-inches apart.
Bake for 10 to 12 minutes or until golden. Cool the cookies on the cookie sheets for 2 minutes, then transfer them to wire racks to cool.
