"Melissa’s Global Produce" fresh fruit and scrumptious sweet cream make this a simple and delicious dessert.
- 1/3 cup ricotta cheese
- 2 tablespoons plus 1/3 cup heavy whipping cream
- 3 tablespoons powdered sugar
- Pinch ground cinnamon
- 1 pint fresh strawberries, hulled and quartered
- 1 peach, sliced
- 2 plums, sliced
- 2 kiwi, peeled and sliced
- 1 tablespoon granulated sugar
- 1 tablespoon fresh lemon juice
- 2 tablespoons fresh mint, cut into thin strips
- 1/4 cup sliced almonds, toasted
Stir the ricotta and 2 tablespoons of cream in a medium bowl to blend. Using an electric mixer, beat the remaining 1/3 cup of cream, powdered sugar, and cinnamon in a large bowl until soft peaks form. Fold the ricotta into the whipped cream. Place in the refrigerator for at least 30 minutes to stiffen.
Toss the strawberries, peach, plums, kiwi, sugar, lemon juice and mint in a medium bowl to combine. Let stand, tossing occasionally, for 15 minutess.
Spoon the fruit mixture into 4 dessert bowls. Top with a dollop of ricotta cream, sprinkle with almonds and serve.
