Using prepared corn bread mix makes this recipe a cinch! Extraordinarily easy comfort food.
- 1 stick (4 ounces) unsalted butter, melted
- 1 large egg, beaten
- 1 cup sour cream
- 1 box Jiffy corn muffin mix (8 ounces)
- 1 cup canned cream corn
- 1 cup canned whole kernel corn, drained
- 1 teaspoon Chef Jamie's Southwestern Chile Spice Rub (optional)
- Chef Jamie's Original Seasoning Blend Spice Rub or salt & pepper, to taste
Preheat the oven to 350°F. In a mixing bowl, combine the butter, egg, sour cream, corn mix, cream corn, whole kernel corn and Southwestern Chile Spice Rub. Season to taste. Pour the mixture into a 2-quart buttered casserole dish and bake for about 1 hour or until golden puffed.
