- 1/2 canola oil
- 1/2 cup applesauce
- 3 carrots, finely grated
- 1 1/4 cups brown sugar
- 1/4 cup honey
- 1 t. vanilla
- 4 eggs, lightly beaten
- 2 t. baking soda
- 2 cups all-purpose flour
- 2 t. cinnamon
- powdered sugar
Combine the first seven ingredients in a large mixing bowl and combine well. Add the soda, flour and cinnamon and mix until well combined. Spray muffin tins with non-stick cooking spray and fill each muffin cup about 3/4’s full. Bake at 350 for 20 minutes. Remove muffins from tins while still warm. When cool, sprinkle muffins with powdered sugar.
