  • 1 stick unsalted butter, at room temperature
  • 3/4 cup smooth peanut butter
  • 1/2 cup sugar
  • 1/2 cup brown sugar
  • 1 egg
  • 1 t. vanilla extract
  • 1 cup all-purpose flour
  • 3/4 t. baking soda
  • pinch of salt
  • 1 cup chocolate chips


Preheat the oven to 350 degrees. Using an electric mixer, in a large mixing bowl, cream together the butter, peanut butter and both sugars until light and fluffy. Add the egg and vanilla and mix until well combined. In a
separate bowl, mix together the flour, baking  soda and salt. Add the flour mixture to the butter mixture and blend until just combined. Fold in the chocolate chips by hand. Spoon the cookie dough, by heaping tablespoons,
onto baking sheets, sprayed with non-stick cooking spray. Press the dough down slightly to form an even thickness. Bake the cookies until golden brown, about 12 minutes.
