Sweet, spicy and delicious!

  • 3 cups old-fashioned rolled oats
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon salt
  • 1/2 teaspoon baking soda
  • 2 sticks (8 ounces) unsalted butter, at room temperature
  • 3/4 cup granulated sugar
  • 3/4 cup dark brown sugar
  • 1 large egg
  • 2 teaspoons pure vanilla extract
  • 1 cup dark chocolate chips or chunks
  • 1 cup candied ginger, finely chopped


Preheat the oven to 375°F.  Line 2 large baking sheets with a silicone baking mat or parchment paper.

In a food processor, combine the oats, all-purpose flour, salt and baking soda.  Pulse until the oats are coarsely chopped.

Using an electric mixer beat the butter, granulated sugar and brown sugar until fluffy about 2 to 3 minutes.  Add the egg and vanilla and beat until smooth.  Add the oat mixture and mix at low speed just until incorporated.
By hand, stir in the chocolate chips and candied ginger.

Drop rounded tablespoons of dough 2-inches apart onto the prepared baking sheets.  Bake cookies until golden and crisp on the edges, about
14 to 16 minutes.  Cool the cookies on the baking sheets for 3 minutes, then transfer to racks to cool completely.  Continue making cookies
with the remaining dough.


Makes 4 Dozen Cookies
