This sauce is rich, dark and delicious for glazing or dipping. Coffee and chilies make the perfect combination to create bold flavors from the grill.

  • 1 tablespoon olive oil
  • 1 large yellow onion, diced
  • 2 garlic cloves, minced
  • 1 cup Chili sauce
  • Juice of 2 Fresh limes
  • 1/4 cup balsamic vinegar
  • 12 ounces Dark beer
  • 1 cup strong brewed coffee
  • 1/2 cup brown sugar
  • 2 teaspoons chili powder
  • 2 tablespoons Worcestershire sauce
  • 1 jalapeño, seeded & chopped fine
  • or 1 chipotle pepper in adobo sauce, pureed (hot!)
  • 1 small can tomato paste
  • Salt and pepper, to taste


Heat the oil in a saucepan over medium heat and sweat the onions until soft. Season with salt and pepper. Add the garlic and sauté for 1 minute more. Add the remaining ingredients and bring to a simmer. Simmer over low heat for 45 minutes. Adjust the seasoning. Cool and use or store in the refrigerator.
