Broiling the berries caramelizes the sugars and makes the berries even sweeter. I like Pistachio Ice Cream as a compliment. As for my wine pairing suggestion, try a light and tropical Riesling for a sweet and creamy, cool and nutty combination.

  • 2 pints fresh strawberries, cleaned, stemmed, and halved
  • 1/2 teaspoon pure vanilla extract
  • 1/2 cup brown sugar, packed
  • Pinch of salt
  • 1 pint pistachio ice cream (or your flavor of choice)

 

Preheat the broiler, placing the rack 3 to 4 inches from the heat source.

In a large bowl, toss the strawberries, vanilla, half of the brown sugar and the salt together. Let stand for 10 minutes.

Place the strawberry mixture on a baking sheet lined with a silpat mat or parchment paper. Sprinkle the remaining brown sugar on top.

Broil for 3 to 5 minutes, or until bubbly and golden brown.

Remove from the oven and spoon over ice cream, or let cool and serve on the side.
