Perfect for your Father's Day BBQ and sure to be a hit all summer long.
- 1/4 cup brown sugar, packed
- juice of 6 limes
- 3 tablespoons freshly grated ginger
- 2 scallions, chopped
- 1/4 cup cilantro or mint, minced
- 4 medium mangoes, peeled and flesh pureed
- Chef Jamie's Original Seasoning Blend or salt & pepper, to taste
- 1/4 cup Rum
Combine all of the ingredients, except the Rum, in a saucepot and bring to a simmer over low heat. Cook for 5 minutes to melt the sugar. Remove from the heat, add the Rum and let cool.
Use as a marinade or as a finishing sauce for grilled meat, chicken or fish.
