- 1 32-ounce can Tomato Juice
- 1 28-ounce can diced tomatoes, drained
- 1 large red onion, diced
- 2 cucumbers, peeled & diced
- 1 yellow bell pepper, diced
- 1 red bell pepper, diced
- 2 garlic cloves, minced
- 2 tablespoons red wine vinegar
- 1 teaspoon worcestershire sauce
- Tabasco, to taste
- 1 teaspoon ground cumin
- Salt and freshly ground white pepper
- 1/4 cup extra-virgin olive oil
Combine all of the ingredients in a large mixing bowl. Chill thoroughly before serving.
To Serve: Garnish with diced avocado and fresh cilantro leaves.
