ASIAN GRILLED PORK TENDERLOIN LETTUCE WRAPS

Ingredients

  • 1 (1 1/2-pound) pork tenderloin, trimmed
  • 2 tablespoons hoisin sauce
  • 2 tablespoons ketchup
  • 2 tablespoons low-sodium soy sauce
  • 2 tablespoons rice wine vinegar
  • 1 teaspoon chili garlic sauce
  • 2 garlic cloves, crushed
  • 2 teaspoons minced peeled fresh ginger
  • Bibb Lettuce leaves
  • Daikon radish, cut into thin strips
  • Cucumber, cut into thin strips
  • Carrot, cut into thin strips
  • Chopped cilantro

Directions

  1. Combine the hoisin, ketchup, soy sauce, vinegar, chili-garlic sauce, garlic and ginger in a resealable plastic bag. Close the bag and shake to combine the ingredients. Add the pork tenderloin and marinate in the refrigerator for at least 4 hours or up to overnight.
  2. Preheat your BBQ to high heat or place a grill pan over high heat on your stovetop. Grill the pork tenderloin, turning often for 15 minutes or until a meat thermometer registers 160°F. Place the pork on a platter; let stand 5 minutes, then slice. Set out the lettuce leaves and veggies and allow your friends to assemble their wraps.
