 ARUGULA, TOMATO & RED ONION SALAD

Ingredients

  • 1/2 lb. fresh arugula leaves, washed and dried
  • 4 roma tomatoes, sliced
  • 1/2 cup red onion, sliced
  • 1/4 cup fresh chopped parsley
  • 2 teaspoons red wine vinegar
  • 1/2 teaspoon Dijon mustard
  • 1/4 cup extra-virgin olive oil
  • salt & pepper

Directions

  1. Remove the stems from the arugula and place the leaves in a salad bowl. Mix in the tomatoes, onion and parsley. Place the vinegar and Dijon in a separate bowl and whisk to combine. Slowly whisk in the oil. Season with salt and pepper. Pour the dressing over the salad and toss to blend well.
