APPLE PIE IN A JAR
A wonderful way to use up the Winter Season's bounty of Apples. This homemade canned apple filling is so handy to keep in your pantry, making it easy to open a jar, pour it into a pie shell and bake...It's the homemade goodness of fresh, hot Apple Pie anytime!
- 28 cups sliced, peeled apples (Granny Smith, Golden Delicious, Rome, or Northern Spy work well. Avoid McIntosh and Red Delicious as they get Mealy)
- 1/2 teaspoon nutmeg
- 4 1/2 cups granulated sugar
- 1 teaspoon sea salt
- 1 cup cornstarch
- 10 cups water
- 2 teaspoons cinnamon
- 3 tablespoons lemon juice
- 3 tablespoons vanilla paste
Combine the sugar, cornstarch, cinnamon, nutmeg, salt and water in a large pot and bring to a boil. Reduce the heat to a simmer, stirring often, until thick, about 15 minutes. Add the lemon juice and vanilla paste and stir to combine. Seal and process the jars in a water bath for 20 minutes, following the standard canning procedures.
Yields 7 One-Quart Jars
