JAMIE’S PEACH CARAMEL UPSIDE-DOWN CAKE
An upside-down cake looks like a challenging, fancy dessert to make
but it's actually quite simple. Using fresh peaches (or nectarines, or apricots or plums!) creates an unforgettable dessert that is simply delicious…perfect for entertaining friends or for Sunday Supper dessert.

For the Caramel:
6 tablespoons unsalted butter, plus additional for coating the pan
1 cup granulated sugar
4 large or 6 small fresh peaches, halved and pitted
(or nectarines, apricots or plums)

A wonderful way to use up the Winter Season’s bounty of Apples. This homemade canned apple filling is so handy to keep in your pantry, making it easy to open a jar, pour it into a pie shell and bake…It’s the homemade goodness of fresh, hot Apple Pie anytime!

28 cups sliced, peeled apples (Granny Smith, Golden Delicious, Rome, or Northern Spy work well. Avoid McIntosh and Red Delicious as they get Mealy)
1/2 teaspoon nutmeg
4 1/2 cups granulated sugar
1 teaspoon sea salt
1 cup cornstarch
10 cups water
2 teaspoons cinnamon
3 tablespoons lemon juice
3 tablespoons vanilla paste

APPLE PIE with CHEDDAR CRUST

Pie Crust:
1 and 3/4 cups all-purpose flour, sifted
1/4 teaspoon coarse salt
1 cup grated good-quality sharp cheddar cheese
1 1/2 sticks cold unsalted butter, cut into pieces
1 large egg
