HAUNTED MARSHMALLOWS
Best to use a standing mixer for these homemade marshmallows.
- 2 packages plus 1 t. unflavored gelatin
- 2/3 cup cold water, divided
- 1 1/4 cups sugar
- 1 cup light corn syrup
- 2 t. vanilla
- powdered sugar
- 1 1/2 cups black and orange colored sugar
Sprinkle the gelatin over 1/3 cup cold water. Let stand 10 minutes to soften. Bring the sugar and remaining 1/3 cup water to a boil in a small covered saucepan. Uncover and boil 5 minutes. Pour the mixture into the bowl of an electric mixer. Add corn syrup and gelatin and stir until dissolved. Beat at medium speed until stiff peaks form, about 10-20 minutes. Add in vanilla.
Dot the corners of a jelly roll pan with a bit of the marshmallow mixture. Then line the pan with wax paper. (The dots keep the paper in place!) Spread the marshmallow mixture evenly into a 3/4" thick rectangle. Sprinkle lightly with powdered sugar and let stand until firm.
Cut out halloween shaped using metal cookie cutters. Remove the cutouts form the pan using a metal spatula. Coat the marshmallows with colored sugar.
Makes about 24 2" marshmallows
